I’m in LOVE!  With a new food that is….

Red Palm Oil.

For months, it was on my list of things to try. Coconut oil had been my go to oil for cooking and baking.  But ever since I discovered that I needed to avoid coconut (which I learned from food sensitivity testing),  I’d been experimenting with grape seed oil, avocado oil and a few others. Not excited about any of them, I was in a bit of a rut until the other day.

While shopping at one of my favorite health food stores, Kimberton Whole Foods, I stumbled upon red palm oil.  I’d read reviews on Amazon about how it had a strong after taste which made me hesitant to buy it.  But given it’s amazing health benefits and because it was staring me in the face, I decided that it was time to try it.

Red palm oil is like a natural dietary supplement.  The unique combination of medium chain fats in both coconut oil and red palm oil are what have been discovered to have profound health benefits. Health benefits like better brain function, improved metabolism and fat loss, while also being a sustainable source of energy.

As if that is not enough, red palm oil is also a rich source of vitamins and antioxidants including Vitamin E and other phytonutrients important for good health.  It’s what some would call an anti- cancer food. For example, it’s deep pinkish orange color comes from carotenes which are valuable nutrients and powerful antioxidants that convert to vitamin A, boosting immunity and healthy cell growth.

But I wasn’t thinking vitamin A or E when first set eyes on the oil. I was just thinking how fun it was to cook with an oil of such a dense beautiful color.

My first time using it was like love at first site.  I used it to make a colorful veggie stir fry and also to pan sear some lamb.  Both dishes were amazingly delicious!  I must say I immediately tasted the difference in flavor with the oil’s lightly bitter aftertaste.  But fortunately, it didn’t last.

The most exciting part of the experiment was that my body gave me the sensation that I was feeding it something it needed and was loving me back for it. So, I’m trusting my gut on this one and will keep on experimenting with red palm oil in my kitchen…..
