One of my favorite discoveries of the past year was theSquirrel and the Bee, a grain free bakery in Short Hills New Jersey. Unfortunately, it’s two hours from my house or you can bet I’d be there practically every day.
It is my dream come true! Everything is made from scratch using the same principles I use in my cooking and have for fifteen years, grain free, dairy free, natural sweeteners and other whole food ingredients. At Squirrel and the Bee, they serve dreamy donuts, dairy free ice-cream, quiche, smoothies, cookies, brownies and more!
This smoothie was inspired by one they serve there called the Big Green. What makes this smoothie extra special is the mint, don’t skip on this ingredient or you may be disappointed. What’s your favorite smoothie?
10 sprigs fresh mint leaves
1 cup apple cider, preferably organic
1/2 ripe avocado
1 heaping handful of fresh spinach
1 heaping handful of fresh kale leaves
Place all ingredients in a blender and blend until smooth, adding some water if it’s too thick. Yum 🙂
