IMG_2397While the idea of grilling peaches may seem superfluous or a bit intimidating, it is actually super easy and well worth every bit of effort. Perfectly ripe peaches are the key to this recipe, and there’s no better time than now, the end of summer, to make this delicious dessert. For me, it is one way I feel like I can still savor summer even once it’s over.

Truth be told, I’m not a big fruit eater, and still I find these peaches to die for!

Grilled Peaches
4 peaches, cut in half and pits removed

Place peaches on a preheated grill, set to medium low heat (around 350 degrees). Grill peaches flesh side down for about 5 minutes. Then flip, grilling the skin side for an additional 3-5 minutes. Drizzle with some raw honey and top with coconut whipped cream.

Coconut Whip Cream
1 can full fat coconut milk
1 tablespoon raw honey
2 teaspoons pure vanilla extract (gluten free)

Place can of coconut milk in refrigerator for several hours or in freezer for 15 minutes – this will allow the cream of the milk to float to the top and harden, leaving the liquid portion below. With a hand held electric mixer, whip the coconut cream with the honey and vanilla.
