This purple cauliflower is my favorite fall vegetable. Just looking at it’s natural vibrant color makes me happy! Once it’s roasted with some delicious spices, it will make your belly smile too 🙂

Roasted Cauliflower with Indian Spices
1 head purple green or white cauliflower
1/8 teaspoon coriander
1/4 teaspoon ground cumin
1/4 teaspoon ground numeric
1/8 ground cayenne pepper
1/4 teaspoon coarse sea salt
1/4 teaspoon fresh ground pepper
2 tablespoons toasted sesame oil
Preheat oven to 400 degrees. Chop cauliflower into bite size florets and place in a large bowl. Toss with spices and oil. Roast in a large baking dish for 30 minutes or until tender.
