These fritters are unbelievably delicious and so easy to whip up. In my house, we love zucchini, and it’s fun to create different ways to incorporate it into recipes. This is one of my favorites.

Simply grate your zucchini, using a hand grater or food processor with the grater attachment. One of the challenges with zucchini is it’s water content, so it’s absolutely necessary to drain it before trying to make these pancakes or fritters.

If you have picky eaters in your house, it’s a great way to get them to eat veggies. Serve the fritters with a dipping sauce for more fun!

Zucchini Fritters

2 organic zucchini
1/4 cup coconut flour
1 organic egg
2 tablespoons shredded pecorino or parmesan cheese (optional)
Pinch of cayenne pepper
1/2 teaspoon sea salt
1-2 tablespoons coconut oil or ghee

Using the shredder attachment on food processor, or with a hand grater, shred zucchini. Place in a bowl. Toss with salt and let sit for 10 minutes. Zucchini will “sweat” and release water. Squeeze as much of this water out using a paper towel or cheese cloth. Once relatively dry, mix zucchini with egg, cheese, cayenne and coconut flour. Form into patties. Heat oil over medium high heat. Add pancakes, cook for about three minutes. Then flip and cook for another 3-5 minutes until crispy and warm.
