Looking for an easy peasy lunch idea? This is it…..egg salad.

Of course, even easier would be to simply eat the hardboiled eggs all by themselves.

But adding a few yummy ingredients transforms eating just eggs into a whole new experience. 

All of the sudden you have a satisfying crunchy meal instead of just an egg.

My husband loves this salad because he is a big fan of onions and celery. If I leave just hardboiled eggs in the fridge, he won’t eat them, but when I make this salad he gobbles it up!

Last fall when we visited my sister at her home in New Hampshire, we also got a chance to peek into her hen house.

This was our first experience watching hens lay their eggs, which if you haven’t done, it’s quite magical.

It was also fun watching the chickens roam the garden eating grass, seeds, worms, grubs, bugs, worms and veggies. An animal lover, I must admit their feathers looked so soft I followed them around until they succombed to allowing me to pet them, LOL!

Kelly swears they were the best eggs she’s ever tasted. The yolks were a dark yellowish orange color and had a rich almost buttery like flavor.

It’s no secret that eggs from healthy chickens, who are given the freedom to roam in open pastures or gardens are the best eggs. Not only do they taste better but they are also better for you.

People think that egg whites are the powerhouse of the egg, when in reality all the nutrition of an egg is in the yolk. The yolk is rich in phospholipids like choline. This type of fat is a critical component in building cell membranes. Eggs are one of the primary sources of phospholipids in our diets. So don’t deprive yourself of all the golden goodness from the yolk.

In a pinch I use Primal Palate’s avocado mayonnaise, but my favorite tasting mayonnaise is homemade. It’s really so easy to make using an immersion blender and is totally worth the effort from both a nutrition perspective and taste. Paleo Egg Salad

4 hardboiled organic pasture raised eggs
1/4-1/3 cup mayonnaise
1 -2 tablespoons Annie’s organic horseradish mustard
1/2 cup chopped organic red onion
3/4 cup chopped organic celery

Peel and chop eggs. Add to a bowl. Stir in remaining ingredients and season with sea salt and fresh ground pepper. Refrigerate and serve with sliced fresh tomatoes, lettuce and avocado. YUM!
